Volatile Compounds in Different Parts of Perilla frutescense Seeds

Abstract

|
This study was performed to identify and profile the volatile compounds present in different parts of the perilla seed. Perilla seed (PS), hulled perilla seed (HPS), perilla seed peel (PSP), perilla seed oil (PSO), and perilla seed cake (PC) were analyzed. Volatile compounds were extracted by simultaneous distillation extraction and analyzed by gas-chromatograph-mass spectrometry. Thirty-six kinds of volatile compounds were identified (2 alcohols, 7 aldehydes, 4 furans, 16 hydrocarbons, 4 ketones, 3 others). The different parts of the perilla seeds mainly contained furans, aldehydes, and hydrocarbons. PS, HPS, and PSO mainly contained furans (59.25%, 33.02%, and 71.43% respectively), hydrocarbons (25.55%, 29.77%, and 14.12% respectively) and aldehydes (8.02%, 27.50%, and 10.67% respectively). PSP mainly contained aldehydes (39.54%), furans (29.49%), and hydrocarbons (18.86%). PC mainly contained furans (41.55%), aldehydes (30.56%), and hydrocarbons (27.88%). The major volatile compounds in the different parts of perilla seed were hexanal (Green odor type), (E,E)-2,4-heptadienal (Fatty odor type), perilla ketone (Woody odor type), and 3,5-octadien-2-one (Fatty odor type). From the results of this study, it can apply as a data base when utilize different parts of perilla seeds.
